I put some land on deep water and put water back on it and got a completely different color.

Then I placed water on land and put land on the water

: I placed land back on the spot. Notice the different shade on green over it

The first one, keep placing a water at the spot there until it's dark again. Make sure that you are building water and not placing a water decoration. The land has always been that way.
